Pathfield School African Food 1 (2) Website.jpgMy mission is to give a holistic experience of African culture, and I therefore can include food in the repertoire of workshops. African food is healthy, and wholesome, with a huge emphasis on snacking on tropical fruits, and foods which are delicious in their uncooked states of simply roasted  or boiled in their skins and husks such as grounduts, sweet potatoes, sweet corn, pumkins and cassava, a delicious root vegetable. At your invitation, We will learn to prepare a traditional meal from Zambia and Malawi. These are countires where I grew up, so I have an intimate knowledge of the food and the way in which it is prepared.

Nsima (a staple traditional dish made with maize flour), spicy beans, chicken in groundnut sauce, or kapenta (dried white bait) in an onion and tomato sauce, greens in onion and tomato sauce, followed by mango fool or banana split, with passion fruit icecream.

Snacks : chikonda moyo (banana cake),  nfutali (sweet potato in groundnut sauce), roasted groundnuts, nutty crunch (ground nut sweets), roasted sweet corn and sweet potatoes, avocado dip, tropical fruits such as water melon, pineapple, mango, guava, cape gooseberries.

FEES are dependent on the cost of ingredients, length time and place of project and travel expenses.
